FFA members and students in Bill Emery’s Greenhouse Tech course began their second harvest yesterday destined for the Red Wing High School café.
The first took place Tuesday, Nov. 5.
The school-based agriculture project is an extension of the classroom, where students learn entrepreneurial skills, food production and food preparation.
All Red Wing High School students potentially benefit because the fresh greens make their way to the lunch line, showing up in sandwiches and salads.
Student Nutrition Services Director Jess Peña says they used special labels to alert students and staff that something special – grown right here – was on the menu.
Before that could happen, the school's Greenhouse Tech program had to earn certification and create a food safety plan.
This project is a collaboration of the Farm to Table program.
